Veggie & Chicken Bake

Sometimes you just need that meal you can cut up, season and stick in the oven. This is one of those meals! It was so easy.

Preheat oven to 400 degrees.

1 head of broccoli

2 yellow squash

1 bell pepper

1 green bell pepper

1 red onion

Chicken

grape or cherry tomatoes – cut in half

All cut into bite sized pieces. The size is up to you.. depending on how big your mouth is.

Lay everything out on a rimed baking sheet (Calphalon is the only kind I use because it doesn’t really stick and its reasonably priced) Use about 2 tablespoons of oil (Olive, melted Coconut or Avocado oil) and rub veggies and chicken until lightly coated. Now add spices. You can go heavier or lighter on any spice.. just do what you think you like. I always use way too much garlic powder but I like it that way.

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

1/2 tsp ground black pepper

If you like it hot, add 1/2 tsp cayenne pepper

Cook 30 mins.  Check half way though and toss everything. Be sure to always check your chicken before you eat it. Every oven is different. The safe temp for chicken is 165 degrees. When in doubt, stick it back in the oven and let it cook a little longer. Veggies should be soft enough (to your liking, some people like them crunchy) to easily stick a fork through – not fall apart when the fork touches it. 20170117_174306.jpgThere are so many amazing things about the next picture I couldn’t help but post. My son you will notice is not Paleo. Remember Drake is a medical unicorn.. well he requires more calories than most kids and he loves veggies so that Jif “PEEBUUTTTAH” sitting right there.. if he wants it, he gets it. Also, he gets apple juice (Which I swore he would not get often) because he has bathroom issues.. hence he is playing with the bottle of Miralax while playing with his cooking toys beside our dinner. #MomLife20170117_174319.jpg

This is an awesome go to meal when you just don’t have a lot of time. If it makes it easier, you can take a prep day and cut veggies at the beginning of the week and let it sit in your fridge until its time to cook. I would definitely leave the chicken out of the veggies until you are ready to cook. I cut these during nap time after my shower and letting my hair air dry then cooked them that evening.
