This is another great meal from WellFed Weeknights. page 87. I am telling you, get this book! It is on my menu from last week I hadn’t cooked. I had a procedure last week so Chris picked everything on the menu that he wanted to cook. This was one he was super excited about, but not really my forte. I like home style cooking, but gravy with no REAL gravy? We will see. (and I dont like mushy food). This was Delicious!!!!
So remember how I had shown the house all day and our 4:30 showing and I got home with a car full of groceries at 4:28? Well they showed up at 4:39 and I had ALMOST everything put away. Mickey Choo Choo was on TV and I was running around like a mad woman barking orders at the boys. Well this couple was awesome and we talked way too long (Imagine that… Chris and I being talkers…) So I poured myself a drink and started getting everything out for this meal. Doorbell rings. Chris’s buddy and his little girl (She is all grown up and 5 now by the way.. she said tonight) come in. He had to use one of Chris’s tools. So thank goodness she was there to entertain Drake a little. They were all over the kitchen, watching me use the food processor and *little girl* has a thousand questions. I don’t have anyone to talk to but Drake, Chris and Hank the cat so bring them on sweetheart!! I get the pans hot start everything cooking and get in a groove. Phone buzzes… can we see your house in 10 mins? We rent down the street and your home is beautiful!! Uhhhhhhhh sure??? I can’t say no! Everything but the kitchen is clean! That doesn’t happen often. So here I go running.. Drake literally said Mommy fast! Ya’ll, I had dinner cooked, plated, took a messy picture, covered it up and put soapy water and dishes in the sink. Got Drake’s dinner in high chair and the door bell rings. Whew! FINALLY after this super sweet couple leaves its 8 and we are starving. This meal absolutely hit the spot! Best part.. in all of the madness that was today, it was so easy!!
I did cook my cauliflower a little differently (not really on purpose) I was just doing my usual thing before I noticed hers was a little different. I will post both, you cook how you like it best.
First I go down the ingredient list and pull everything out that I will need. I cut and chop any veggies, and pull out all of the seasonings. If it is a mixture, I will pre measure. It is just easier to have it done and I don’t have to pour, measure and worry about timing.

Tools: Food Processor
- Cauliflower Rice:
- 1 large head cauliflower
- 1 tbsp EVOO (Extra Virgin Olive Oil)
- 3/4 tsp salt
- Ground Beef and Gravy:
- 2 tsp EVOO
- 1/2 medium sweet onion
- 3 tbsp potato starch or arrowroot powder *I used arrowroot powder*
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/8 tsp dried thyme leaves * I used oregano. I was out of thyme*
- 1 1/2 lb ground beef
- 2 cloves garlic * I used 4 because I like garlic a lot *
- 3/4 c water or chicken broth *I used broth *
- 1 tsp coconut aminos
- garnish: fresh parsley leaves
- garnish: fried egg * Its like an egg on a burger. Everything is better with a fried egg on top.
- Rice the cauliflower. Some people buy it riced, I am cheap so I will rice my own and do extra dishes. Break the cauliflower into florets, removing the stems. Place in food processor bowl and pulse until cauliflower looks like rice.
- Warm the oil in a large nonstick skillet over med-high heat, 3 mins. Add the cauliflower and salt. Toss with two wooden spoons to coat. Cover, reduce heat to low and cook undisturbed for 10 mins while you prep the meat. ** I cooked mine for 10 mins uncovered and left on low-med heat. I like it a little stiffer vs steamed soft. I remove from burner and cover until I am ready to use it. **
- Cook the onion. Place the olive oil in nonstick skillet over med-high heat. ** I used cast iron. It requires a little more stirring, but I prefer it because it is what I am comfortable using and I love them. Anyone with training will probably tell you this is wrong ** While the oil heats, finely mince the onion. (I do this before hand). Add onion and a pinch of salt to the pan and cook until onion is translucent – about 5 mins. While onion cooks combine the potato starch, salt, pepper, and thyme in a small bowl; set aside. *
- Crumble the beef into the skillet with onion and cook, breaking up with wooden spoon. While it cooks, peel and crush the garlic (I minced mine) and add them to the pan. When the meat is beginning to lose its pink color, add the starch-spice mixture. Stir to combine then add the water and coconut aminos. Stir again and simmer uncovered until the sauce is thickened and bubbly. Mince parsley and set aside.
- Finish the rice. Remove the lid form the cauliflower, stir and let it cook uncovered while the beef gravy thickens.
- Cook the fried eggs to top. My “fried egg” is literally a tiny bit of olive oil in a nonstick pan. Heat it up, add the egg then sprinkle with a little salt and pepper. About 45 seconds on each side should do it. Every pan, stovetop is different. I like my eggs runny.
- To serve, divide the cauliflower rice among individual bowls, then top with ground meat and sprinkle with parsley.
My favorite part of this cookbook: You know what you could do with that!? Her words, “Make a quasi-Hawaiian-style loco moco: Add a few fried eggs to the top of your ground beef and gravy pile.” I did this and it made it creamy and Oh. My. Goodness. Delicious!
Coconut Aminos has plenty of brands. I usually get a different kind, but this was on sale.
It tastes just as good. When cooked, I really cannot tell a difference in the two. These are the two I use most often. This is the other I use. It is usually cheaper online, IF you can get low cost or free shipping.
I love using fresh garlic, but let’s be honest.. its a pain to peel and if you get it under your nails no matter how short you smell garlic for a week! Just a little hack: I cut the end off of my garlic and then smash it a bit with the side of the knife blade. It almost peels itself.
