Whole 30 Instant Pot Chicken Tortilla-less Soup

Ok so I have read a lot about the Instant Pot and decided they were over rated and I didnt need one because I have a brand new crock pot. Well Dad and Sherri got me one for Christmas and let me tell you… I am now a HUGE fan! This baby is fast and one pot mess. One of the hardest parts (in my opinion) of cooking healthy is the anount of dishes. Instant Pot, 1 bowl. Mom win!

Another awesome thing I just learned.. I am terrible about sitting meat out to thaw. With the Instant Pot I can throw brick, frozen chicken in and within 30 mins have fall apart chicken.. Mind. Blown. Needless to say… I am a fan. In this recipe, my chicken was thawed but taking it out I was able to literally smash/shred with one fork effortlessly.  fall. apart. delicious. chicken.

This recipe I found on Pinterest and it is one of the first ones I tried in my instant pot. I have made it a couple of times and Chris asks for it regularly. That is saying something. He will eat it for lunch and dinner a couple of days in a row then ask me to make more! You can make this in a crock pot as well.

** in my picture my Instant Pot is under my cabinet. Do NOT do this. When you let off steam, be sure it is away from everything. You dont want that hot steam ruining cabinets. Also, I always release pressure with an oven mit AND Drake completely out of the kitchen. Maybe I am paranoid? or just accident prone.

This is 40 Aprons Whole 30 Instant Pot Chicken Tortilla-less Soup.

2 boneless skinless chicken breasts
2 cans RO*TEL ( I used Fire Roasted)
1 14.5- ounce can Whole30-compliant chicken broth ** Swanson’s is my favorite, but not           whole 30 compliant.
2 chipotle peppers in adobo sauce (available at any Walmart) Canned. I put them in                   whole, but you can chop them for added spice. They are not deseeded.
2 teaspoons adobe sauce
1 medium onion
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon cumin
2 teaspoons chili powder
1 teaspoons dried oregano
1 teaspoon smoked paprika
1 1/2 teaspoon salt
2 zucchinis * I chopped mine into cubes.
1 14- ounce can full-fat coconut milk or coconut cream

fresh avocado slices
red onions
fresh cilantro
coconut cream
lime juice
shredded cheese
tortilla strips
1. Sprinkle boneless skinless chicken breasts with salt. Add the chicken breasts to the Instant Pot.
Add the remaining ingredients from RO*TEL to medium onion, then add spices. Top with
2. Secure the lid on the pot. Cook at high pressure for 20 minutes. Allow the pressure to naturally
release for ten minutes, then use the manual release. Pull out the chicken breasts and add
coconut milk. Switch Instant Pot to Sauté mode and stir to combine. Dice chicken, then return
to soup. Serve hot, topped with garnishes of choice.

Recipe Notes
If you don’t have an Instant Pot, you can make this Whole30 chicken tortilla-less soup in the slow cooker.
Add all ingredients, except coconut milk, in order listed. Cook on low heat for 7 hours or on high heat for 4 hours. Remove chicken breasts and dice. Stir in coconut milk, then return chicken to slow cooker. Serve with garnishes.
If you can’t find Whole30-compliant chipotle peppers in adobo sauce, substitute 1-3+ teaspoons of chipotle powder for the chipotle pepper and adobo sauce, depending on how smoky and spicy you like it.

One of my new go to favorites! The broth is fantastic! I was not familiar with 40 Aprons, but man, Cheryl has some awesome looking recipes! Give her a look for sure!
