I swear I run on coffee and Amazon prime. Seriously.. I try to order 1 thing and order 30!
So during my whole 30 attempt lately I decided to cut out coffee creamer. I have never in my life not used creamer and to be honest I thought my husband was gross for drinking coffee black. I also did NOT understand why we ordered our coffee in because come on, coffee is coffee. Well I was WRONG. I started drinking black coffee and its like I can see through a haze I never knew existed.
We order our coffee from Black Rifle Coffee company and if you havent heard of them, look them up. They are a company made of 99% US Vets and are doing amazing things for this country! Not to mention their coffee is the best I have had. When starbucks ( yes, I refuse to capitalize their name because I am not a fan, but I will not make this a political blog) said they would hire 10,000 refugees, Black Rifle ( a company of 50 employees) said, ok, we will hire 10,000 Vets. It may take a while but that’s their plan. We have joined their coffee club and I believe we spend only $5 more a month and I feel like I am making at least a little bit of a difference. Oh, and they have cool clothes! If you don’t order their coffee, just follow them on social media, it is hilarious! We could all use a little inappropriate jokes in our lives. Drake says… “Smells DELICIOUS!” Thats right…. teach them young! No… my toddler does not drink coffee. Only milk and calls it coffee!
So Annnyyyywayyyys… ** Yes, I went off on my coffee rant just because I mentioned coffee and amazon prime. Stick with me!…. ** Jennifer Robins – Predominately Paleo is awesome. While going through the list of things I do not need from Amazon I found this little gem that cost me $12 and let me tell you, it is full of goodies! It is a Whole 30 Instant Pot cookbook! I love it! $12!!
There are few things better than a big bowl of potato soup on a super cold day. All of the recipes I grew up with are so heavy, full of cream, butter and delicious terribleness! This is such a simple recipe and oh so yummy! You do not miss the guilty pleasures.. Here it is, You’re welcome!
- 1 tbsp cooking fat (ghee, avocado oil, olive oil)
- 1 onion, chopped
- 6 medium/large Yukon gold or 6 small russet potatoes
- 32 oz Chicken Stock
- 1-2 tsp sea salt
- 1/2 tsp celery salt
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1 tsp garlic powder (or 3 cloves fresh garlic)
- 1 cup almond milk, coconut milk or preferred dairy-free milk.
Toppings: 8 oz crisped bacon, freshly minced chives and dairy-free cheese.
Plug in your Instant Pot and press the Saute feature. Drizzle in the cooking fat and toss in the onion. Saute until the onion is translucent, or about 8 minutes. Then add in your potatoes, stock and seasonings, reserving only the milk and garnishes for later. SEcure the lid and close the pressure valve. Now press the soup button (high pressure, 30 minutes) and allow the contents to cook. Once complete, quick-release the pressure valve and remove the lid once safe to do so. Now use and immersion blender to puree the contents until smooth. Pour in the dairy-free milk and stir to combine. Add any additional salt or pepper as desired. Serve at once topped with bacon, chives and dairy-free cheese.
Alternative: If using a slow cooker, place all of the ingredients in the basin except for the milk and garnishes. Cook on low for 6 hours then use an immersion blender to puree until there are not more chunks of potato. Add the milk, stir and allow to cook for 30 more minutes on high or heated through. If it is not thick enough, you can make a slurry by taking 1/4 cup of the soup and stirring in 2-3 tbsp of tapioca starch, then reintroduce it into the slow cooker, stirring to combine until it’s reached desired consistency.
I changed a few things on this recipe. Again with the liquid gold bacon grease. I turned on my saute function in my Instant Pot and added my chopped bacon. Once cooked through I pulled the bacon out and left the grease in the bottom. I then let my onions saute in the bottom on the instant pot in bacon grease, rather than adding a fat.
I did not have celery salt so I just added a few sprinkles of Dill and it tasted great. I used almond milk rather than coconut milk. We like the heat so I threw in a chopped jalapeno with the onions. Also, I added a little cheese to my recipe because… I like real cheese. We are not on a whole 30 just clean diet. I can’t speak for Chris, but I just had a little sprinkle with my 1 lb of bacon….. 🙂
Next time I may try this with a few chunks of potato left.. there will be a next time.
